Fall has been slow to arrive here in the North Carolina mountains. We had an unusually warm September and early October, but now I see it was well worth the wait. I made the Instant Pot Vegetable Beef Soup tonight. It was fantastic! Amazing depth of flavor, exceptionally tender beef, and loaded with healthy vegetables. It was all that a good winter Soup should be; hardy, filling,satisfying!
I grew up eating my grandmothers homemade Vegetable Beef Soup. It was my favorite meal as a child. This recipe has that one beat!Reply

That lasagna soup needs to go to the top of my list! I'm making soup at least once a week now and loving every spoonful. We just came back from a whirlwind trip through Ohio and Indiana.
